Since 2010, rice noodle consumption has been steadily increasing in the northeastern provinces, Shandong, Beijing, Tianjin, Henan, Hebei, and Xinjiang. China is the largest producer and consumer of rice noodles globally. Currently, 99% of rice noodle production is still labor-intensive, using a combination of manual and mechanized processes. Most rice noodle manufacturers in China are small-scale workshops with an annual production capacity of around 1,000 tons. There are fewer than 60 large-scale manufacturers with an annual production capacity exceeding 10,000 tons, and these are generally characterized by poor hygiene and outdated facilities.
